Carne Asada Skirt Steak is a vibrant, flavorful dish perfect for tacos or as a main course. Marinated in citrus, spices, and fresh herbs, this skirt steak grills quickly and delivers bold, smoky flavor.
Ingredients
- 1 lb skirt steak
- Jimmy P’s Seasoning
- 2 cups sautéed onions and peppers
- 8 flour tortillas
- Guacamole (optional)
- Pico de gallo (optional)
- Sour cream or crema (optional)
- Cotija or your favorite cheese (optional)
Marinade
- 2 tablespoons olive oil
- 1/3 cup orange juice
- 2 tablespoons diced onion
- 2 tablespoons lime juice
- 2 tablespoons cider vinegar
- 2 tablespoons chopped cilantro
- 2 teaspoons cumin
- 2 teaspoons chili powder
Instructions
- Add all marinade ingredients to a resealable plastic bag. Add skirt steak, press out the air, and massage marinade into the meat. Refrigerate for 1 to 4 hours.
- Preheat your grill until very hot. Remove steak from marinade and pat dry. Season lightly with Jimmy P’s Garlic Blend or your favorite seasoning.
- Grill quickly on high heat until medium rare (about 120°F internal temperature). Remove and let rest for 4–5 minutes.
- While steak is resting, grill the tortillas until warm and slightly charred.
- Slice the steak against the grain and serve with tortillas, sautéed peppers and onions, and your favorite toppings like guacamole, pico de gallo, crema, or cheese.
