This cocoa-rubbed Wagyu New York strip steak brings a rich, smoky flavor that’s perfect for an elevated dinner for two.
Ingredients
- 1 tablespoon cocoa powder
- 1 teaspoon ancho chile powder
- 1 teaspoon smoked paprika
- 2 (12 oz) Wagyu New York strip steaks
- 3 tablespoons high smoke point oil
- Kosher salt and fresh black pepper, to taste
Instructions
- Preheat the oven to 400°F.
- In a small bowl, combine the cocoa powder, ancho chile powder, and smoked paprika.
- Season the steaks with kosher salt and black pepper, then rub each steak with the cocoa spice mix.
- Heat a heavy-bottomed ovenproof sauté pan or cast-iron skillet over medium-high heat. Add the oil and heat until it begins to smoke.
- Add the steaks and sear on one side until deeply caramelized, about 5–6 minutes.
- Flip the steaks, transfer the pan to the oven, and roast until the internal temperature reaches 125°F for medium rare, about 10 minutes.
- Remove from the oven and let the steaks rest for 15 minutes before slicing.
