Cocoa-Rubbed NY Strip Steak for Two

This cocoa-rubbed Wagyu New York strip steak brings a rich, smoky flavor that’s perfect for an elevated dinner for two.

Ingredients

  • 1 tablespoon cocoa powder
  • 1 teaspoon ancho chile powder
  • 1 teaspoon smoked paprika
  • 2 (12 oz) Wagyu New York strip steaks
  • 3 tablespoons high smoke point oil
  • Kosher salt and fresh black pepper, to taste

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, combine the cocoa powder, ancho chile powder, and smoked paprika.
  3. Season the steaks with kosher salt and black pepper, then rub each steak with the cocoa spice mix.
  4. Heat a heavy-bottomed ovenproof sauté pan or cast-iron skillet over medium-high heat. Add the oil and heat until it begins to smoke.
  5. Add the steaks and sear on one side until deeply caramelized, about 5–6 minutes.
  6. Flip the steaks, transfer the pan to the oven, and roast until the internal temperature reaches 125°F for medium rare, about 10 minutes.
  7. Remove from the oven and let the steaks rest for 15 minutes before slicing.

Serve with a fresh side salad or roasted vegetables for a complete meal.
