Ingredients

For the Filet Mignon Steak

  • 2 filet mignon steaks (6–8 oz each)
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 2 large eggs
  • 1/4 cup buttermilk
  • Vegetable oil for frying

For the Gravy

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • Salt and black pepper to taste

Instructions

Prepare the Filet Mignon Steak

  1. Preheat oven to 200°F (95°C) to keep steaks warm after frying.
  2. Season filet mignon with salt and pepper.
  3. In a shallow dish, combine flour, paprika, garlic powder, onion powder, and cayenne.
  4. In another dish, whisk together eggs and buttermilk.
  5. Dredge each steak in seasoned flour, dip into egg mixture, then back into flour, pressing to coat evenly.
  6. Heat 1/4 inch of oil in a skillet over medium-high. Fry steaks 3–4 minutes per side until golden brown.
  7. Transfer to a baking sheet and keep warm in oven.

Make the Gravy

  1. In the same skillet, reduce heat to medium-low.
  2. Add butter and melt. Stir in flour to create a roux; cook 2 minutes until lightly golden.
  3. Slowly whisk in milk, stirring constantly to avoid lumps.
  4. Simmer 3–4 minutes until thickened. Season with salt and pepper.
