- 1/4 cup buttermilk
- Vegetable oil for frying
For the Gravy
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup milk
- Salt and black pepper to taste
Instructions
Prepare the Filet Mignon Steak
- Preheat oven to 200°F (95°C) to keep steaks warm after frying.
- Season filet mignon with salt and pepper.
- In a shallow dish, combine flour, paprika, garlic powder, onion powder, and cayenne.
- In another dish, whisk together eggs and buttermilk.
- Dredge each steak in seasoned flour, dip into egg mixture, then back into flour, pressing to coat evenly.
- Heat 1/4 inch of oil in a skillet over medium-high. Fry steaks 3–4 minutes per side until golden brown.
- Transfer to a baking sheet and keep warm in oven.
Make the Gravy
- In the same skillet, reduce heat to medium-low.
- Add butter and melt. Stir in flour to create a roux; cook 2 minutes until lightly golden.
- Slowly whisk in milk, stirring constantly to avoid lumps.
- Simmer 3–4 minutes until thickened. Season with salt and pepper.
Pro Tips
- Filet mignon cooks quickly—watch closely while frying.
- Adjust cayenne pepper for your preferred spice level.
- Buttermilk helps the crust turn crisp and flavorful.
Serving Suggestion
Serve hot with gravy drizzled generously over the steaks. Pair with mashed potatoes, collard greens, and cornbread for a hearty Southern-style meal.
