Ingredients

  • 1/2 lb fettuccine or spaghetti
  • 1/2 lb filet mignon, cut into thin strips
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat oil over medium-high. Sear filet mignon strips for 2 minutes per side until browned but tender. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant.
  4. Whisk eggs and Parmesan together in a mixing bowl.
  5. Return pasta to skillet with garlic. Remove from heat. Pour egg and cheese mixture over pasta and toss quickly to coat.
  6. Add seared filet mignon strips and toss to combine. Season with salt and pepper.

Serving Suggestion

Garnish with fresh parsley and serve immediately with a side of garlic bread or a crisp green salad.
