Don’t let your steak go to waste! This Leftover Ribeye Fried Rice recipe transforms your ribeye into a flavorful, Asian-inspired dish. Tender slices of steak combine with aromatic garlic, veggies, and perfectly seasoned fried rice for a meal that’s rich, hearty, and incredibly satisfying.

Ingredients

  • 1 cup leftover ribeye steak, thinly sliced
  • 3 cups cooked rice (preferably day-old)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, or bell peppers)
  • 2 eggs
  • 2–3 tbsp soy sauce
  • 1 tbsp sesame oil or vegetable oil
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Prepare the vegetables: Heat oil in a large skillet or wok over medium-high heat. Add diced onions and garlic; sauté until fragrant, about 2 minutes.
  2. Add the vegetables: Stir in your choice of mixed veggies and cook until tender.
  3. Warm the steak: Add the sliced leftover ribeye and cook for 1–2 minutes until heated through.
  4. Scramble the eggs: Push ingredients to one side of the pan. Crack in the eggs and scramble lightly until just set.
  5. Combine and season: Add cooked rice and soy sauce to the pan. Stir-fry everything together until evenly mixed and heated through. Adjust seasoning with salt and pepper.
  6. Serve: Garnish with chopped green onions and a drizzle of sesame oil. Serve hot.
