Ingredients
- 1 cup thinly sliced leftover ribeye steak
- 1 small onion, thinly sliced
- 4 slices Gouda cheese
- 4 slices hearty bread (sourdough or rustic white)
- 2 tsp Dijon mustard
- 2 tbsp butter, divided
- Salt and pepper, to taste

- Caramelize the onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook slowly for 10–15 minutes, stirring occasionally, until golden and sweet. Set aside.
