Bring a touch of the French bistro experience home with this classic Steak and Fingerling Frites recipe. Crispy roasted fingerling potatoes pair beautifully with juicy strip steaks and a dollop of rich pesto butter for the ultimate comfort meal.
Ingredients
- 1 lb. fingerling potatoes
- 2 strip steaks (about 1 inch thick)
- 2 Tbsp unsalted softened butter
- 1 Tbsp prepared pesto
- Oil, salt, and pepper
- Large, rimmed baking sheet
- 12-inch skillet
Instructions
- Preheat the oven to 450°F. Scrub fingerling potatoes and quarter them lengthwise to resemble thick-cut fries.
- On a large rimmed baking sheet, toss potatoes with 1 tablespoon of oil and ¼ teaspoon salt. Roast for about 20 minutes, or until golden brown and crispy.
- Meanwhile, season strip steaks with ½ teaspoon salt and ½ teaspoon pepper. Heat a skillet over medium-high heat and add 1 tablespoon of oil.
- Sear the steaks for about 3 minutes per side for medium-rare, or until your desired doneness. Remove from skillet and rest for 5 minutes.
- In a small bowl, combine softened butter and pesto. Serve the steaks with roasted fingerling fries and a spoonful of pesto butter on top.
