Wagyu is a breed of Japanese beef cattle that originated from native Asian cattle. The term "Wagyu" encompasses all Japanese beef cattle, with "Wa" meaning Japanese and "gyu" meaning cow.
Wagyu cattle were originally used as draft animals in agriculture and were selected for their physical endurance. This selection process favored animals with higher levels of intra-muscular fat, known as "marbling," which served as an easily accessible energy source.
