Ingredients

For the Tacos

  • 1 lb cooked prime rib, cubed
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 8 flour street taco tortillas

Homemade Red Salsa

  • 3 Roma tomatoes
  • 2 jalapeños
  • 2 chipotle peppers in adobo sauce
  • 1 lime, juiced
  • 1/2 red onion
  • 1/4 cup fresh cilantro
  • 1 tablespoon taco seasoning
  • Pinch of salt

Instructions

  1. Prepare the Prime Rib: Cut the cooked prime rib into small bite-sized cubes. Season evenly with taco seasoning.
  2. Cook the Meat: Preheat a griddle or flat-top to medium heat. Add olive oil, then place the seasoned prime rib onto the hot surface. Sear and flip occasionally until the edges are crispy and caramelized. The meat is already cooked—just heat and brown it.
  3. Make the Red Salsa: Char the Roma tomatoes, jalapeños, garlic cloves, and red onion directly on the hot griddle. Transfer the charred vegetables to a blender and close the lid to allow them to steam for a minute.
  4. Blend the Salsa: Add the chipotle peppers, taco seasoning, lime juice, and a pinch of salt. Blend until smooth or slightly chunky, according to your preference. Add the cilantro last and pulse until visible chopped pieces remain.
  5. Warm the Tortillas: Place the tortillas on the griddle for a few seconds per side until warm and flexible.
  6. Assemble the Tacos: Add a generous scoop of reheated prime rib to each tortilla. Spoon over the homemade red salsa and finish with chopped onion and cilantro. Serve immediately.
