BBQ-Glazed Hot Dogs with Spicy Slaw

Ingredients
- 3 tablespoons mayonnaise
- 2 teaspoons whole-grain mustard
- 3 tablespoons pickled jalapeños, finely chopped
- 1 1/2 teaspoons pickling liquid from the jalapeños
- 2 tablespoons plus 2 teaspoons Jimmy P's BBQ Sauce, divided
- 1/4 medium red cabbage, cored and thinly sliced (about 2 1/2 cups)
- 1/4 medium green cabbage, cored and thinly sliced (about 2 1/2 cups)
- 1 medium carrot, coarsely grated
- 2 scallions, thinly sliced
- 4 Wagyu or Berkshire hot dogs
- 4 hot dog buns, toasted
Instructions
- Preheat the grill to medium heat.
- In a large bowl, whisk together the mayonnaise, whole-grain mustard, jalapeño pickling liquid, and 2 teaspoons of Jimmy P's BBQ Sauce.
- Add the red cabbage, green cabbage, carrot, scallions, and chopped jalapeños. Toss until the vegetables are evenly coated and set aside.
- Using a paring knife, cut 3 diagonal slits across the top of each hot dog. Make 3 more slits in the opposite direction to create a diamond pattern.
- Place the hot dogs on the grill and cook, rotating occasionally. Brush generously with the remaining BBQ sauce as they cook.
- Grill until the hot dogs are lightly charred and heated through, about 3 to 5 minutes.
- Transfer the hot dogs to a plate and brush with any remaining BBQ sauce.
- Place each hot dog in a toasted bun and top with approximately 1/4 cup of the spicy slaw.
- Serve immediately with the remaining slaw on the side.
