This smoked Wagyu coulotte gets a quick sear on the grill for a lightly charred exterior before being sliced and served alongside a cool watermelon, feta, and mint salad. Fresh lime, flaky sea salt, and olive oil bring the plate together for a refreshing warm-weather steak dinner.

Ingredients

  • 1 Smoked Wagyu Coulotte
  • 1 tbsp olive oil
  • Black pepper, to taste
  • 4 cups cubed seedless watermelon
  • 4 oz feta cheese, crumbled
  • 1/4 cup fresh mint leaves, torn
  • 1 tbsp lime juice
  • 1 tbsp olive oil, for salad
  • Flaky sea salt

Instructions

  1. Rub the smoked Wagyu coulotte with olive oil and cracked black pepper.
  2. Preheat the grill to medium-high heat.
  3. Grill the coulotte for 5 to 7 minutes per side, until warmed through and lightly charred on the exterior. Because the coulotte is already smoked, the goal is to warm the meat and develop color on the outside.
