These grilled tequila steak tacos combine the bright flavors of a fresh lime margarita with tender, smoky skirt steak. Marinated with tequila, lime, cilantro, garlic, and jalapeño, the steak develops incredible flavor before being grilled to perfection and tucked into warm tortillas with your favorite toppings.

Ingredients

  • 3/4 cup tequila
  • 1/2 cup fresh lime juice
  • 1/2 cup Cointreau
  • 1/2 cup prepared margarita
  • 2 cloves garlic, pressed
  • 1 small shallot
  • 1 jalapeño
  • 2 cups fresh cilantro
  • 1 1/2 pounds skirt steak
  • Kosher salt and black pepper, to taste
  • Warm tortillas, for serving
  • Avocado, for serving
  • Radishes, for serving
  • Sour cream, for serving

Instructions

  1. Prepare the margarita by combining the tequila, fresh lime juice, and Cointreau in a pitcher. Stir well and reserve 1/2 cup for the marinade.
  2. In a blender, combine 1/2 cup margarita, garlic, shallot, jalapeño, and cilantro. Blend until smooth.
  3. Reserve 1/4 cup of the blended sauce for serving.
  4. Pour the remaining marinade into a resealable plastic bag and add the skirt steak. Marinate for at least 20 minutes and up to 1 hour in the refrigerator.
  5. Preheat the grill to medium-high heat.
  6. Remove the steak from the marinade and pat dry with paper towels. Season both sides with kosher salt and black pepper.
  7. Grill the steak for approximately 3 to 4 minutes per side for medium-rare, or until it reaches your preferred level of doneness.
  8. Transfer the steak to a cutting board and let it rest for several minutes before slicing.
