Ingredients

• 2 tablespoons olive oil

• 1 pint cherry tomatoes, halved
• 2 celery stalks, very thinly sliced
• 1/2 small red onion, thinly sliced
• 4 small bone-in pork chops, about 1 inch thick (approximately 2 1/4 pounds total)
• 1/4 cup flat-leaf parsley, finely chopped
• 1 small head green-leaf lettuce, leaves torn

Instructions

1. Preheat the grill to medium-high heat.
2. In a large bowl, whisk together the olive oil, red wine vinegar, Worcestershire sauce, horseradish, Tabasco sauce, celery seeds, and 1/4 teaspoon kosher salt.
3. Add the cherry tomatoes, celery, and red onion to the bowl. Toss until evenly coated and set aside while the flavors meld.
4. Season the pork chops on both sides with 1/2 teaspoon kosher salt and 1/2 teaspoon black pepper.
