Ingredients

  • 1 Wagyu Top Sirloin (24 oz.)
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp chili powder
  • 2 ears corn, husked
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder, for corn
  • 1 lime, plus wedges for serving
  • 8 small corn tortillas, warmed
  • Fresh cilantro, chopped

Instructions

  1. Season the Wagyu top sirloin with kosher salt, black pepper, and chili powder. Let it rest at room temperature for 20 minutes.
