Jimmy P's Wagyu Skirt Steak is very tender, flavorful cut of beef.
This cut is often substituted for the flank steak. It is a cut from the Diaphragm of the cow. It has more fat than a flank steak, resulting in rich-flavored meat that is also ideal for mostly the same things as Flank Steak. Marinating these cuts is recommended but not required as it is a very flavorful and tender cut.
